I am very far from being a gourmet chef these days...

But I just typed up this recipe for Kele, so thought I might as well share here. This is a great (Weight Watchers) soup that Lynne shared with me. Easy to make and is usually a hit with the whole family.

2-3 cups chicken breasts* cut up
(Lynne's notation..but lately I've used the boneless wings from the large bags in Meijer and they are mighty tasty)
One 13oz can chicken broth
One 13 or 14oz can refried beans
One 14oz jar salsa (to your taste)
One 13oz can black beans, drained and rinsed
One 13oz. can corn (with juice)
Shredded Mexican mix cheese
Tortilla chips or strips

Put 1 Tbl oil in large/deep pan and cook chicken. About 3-5 minutes, on medium heat. Set this aside in bowl. Put the broth in the pan, add the refried beans, blend and heat on medium temp. Once fully blended, add the salsa, black beans, corn and chicken. Bring just to a boil. Then turn heat to low and simmer 20 minutes. Serve with shredded cheese and tortilla chips.

*Canned chicken works too, of course :)
